I had a drink of Wolfburn's first release, and enjoyed it quite a bit. This bottle is a more recent one, where Wolfburn has begun experimenting a bit: unpeated, matured in 40% second-fill quarter casks, 40% first fill bourbon, and 20% first-fill Oloroso hogsheads. Non-chill-filtered, uncolored, and bottled at a nice 46%. Thank you to Rob Martin for the bottle! Let's see how my second dram from Wolfburn does...
Nose: The nose doesn't blast you with its personality, but instead slowly unwinds. Unusual, in a whisky so young. Pineapple... croissants... butter! Very malty. Melon! Fresh leather!!
Mouthfeel: Thin.
Palate: Spicy (cinnamon and pepper), musty, wisps of smoke, lots of melon. Soft citrus: orange flesh? Honey. Simple, but quite nice. Incredible that this is only 3 years old!
Finish: Short, as you might imagine. Pepper, oak, melon. Nothing world-shaking here.
Verdict: This is so surprising, at only 3 years old!! It has full flavor already. I will have a close eye on Wolfburn - the quality of the spirit is obviously very high, and they are doing some good casking. This is a lovely little dram. Recommended.
